My values contain commas. Will they break?

No, as long as those values are wrapped in double quotes, which is how Excel and Google Sheets export them. The parser follows the standard CSV rules for quoted fields.

Why are some values null?

Empty cells become null when Detect numbers and true/false is ticked, which is the usual JSON way to show a missing value. Untick the option to keep empty cells as empty strings.
